WHITE WINE-MARINATED FISH
4 6-ounce fresh or frozen halibut steaks, cut 1 inch thick
1/2 cup dry white wine
3 Tbsp. olive oil
2 Tbsp. snipped fresh parsley
1 Tbsp. white wine Worcestershire sauce
1 Tbsp. snipped fresh basil
Thaw fish, if frozen. Rinse fish; pat dry. Place fish in a plastic bag set in a shallow dish. For marinade, mix white wine; oil; parsley; Worcestershire sauce; basil; and 1/8 tsp. pepper. Pour over fish. Close bag. Marinate at room temperature for 30 minutes or in the refrigerator for up to an hour, turning the bag occasionally.
Drain fish, reserving marinade. Lightly brush grill rack with oil. Grill fish on rack of uncovered grill directly over medium coals for 8 to 12 minutes or just till fish begins to flake easily, turning once and brushing once with reserved marinade halfway through. Discard any remaining marinade.
Makes 4 servings.
