SHRIMP AND BEEF KABOBS

 

8 ounces boneless beef sirloin steak, cut 1 inch thick
1/3 cup lemon juice
1/4 cup cooking oil
1/4 cup Worcestershire sauce
1 Tbsp. honey
1 1/2 tsp snipped fresh thyme
1 1/2 tsp. snipped fresh basil
1/8 tsp. garlic salt
8 ounces fresh or frozen large shrimp in shells (10 to 16)
1 medium onion, cut into 8 wedges
1 small zucchini, sliced 1/2 inch thick
1 medium red or orange sweet pepper, cut into 1 inch pieces

Partially freeze beef. Thinly slice across the grain into 1/4 inch thick strips. Place strips in a plastic bag set in a shallow dish. For marinade combine lemon juice oil Worcestershire sauce, honey, basil thyme, garlic salt, and 1/4 tsp. pepper. Pour half of the marinade over beef. Close bag. Marinate in refrigerator 3 - 4 hours, turning bag occasionally. Chill remaining marinade. Thaw shrimp, if frozen. Peel and devein shrimp, keeping tails intact.

Meanwhile, in a saucepan cook onion, covered in a small amount of boiling water for 3 minutes. Add zucchini. Cook 2 minutes more; drain.

Drain beef, discard marinade. On 8 long metal skewers thread meat shrimp, and vegetables, leaving 1/4 inch between pieces. Grill on rack of uncovered grill directly over medium coals 10 - 12 minutes or till shrimp turn pink and meat is done, turning once, brush often with chilled marinade. Discard any remaining marinade.
