SPICE AND HERB RUBBED LAMB CHOPS
8 lamb loin chops, cut 1 inch thick
1 tsp. paprika
1/2 tsp. dried thyme, crushed
1/2 tsp. dried basil, crushed
1/4 tsp. coarsely ground pepper
1/8 tsp ground cumin
Trim fat from meat; set aside. For rub, stir together all ingredients and 1/4 tsp. salt. Rub mixture onto both sides of chops.
Grill lamb chops on rack of uncovered grill directly over medium coals to desired doneness, turning once halfway through.
Makes 4 servings.
