GRILLED PORK LOIN
1/4 cup shredded onion
1 Tbsp ground cinnamon
1 Tbsp soy sauce
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1 2-3 lb boneless pork top loin roast (single loin)
2 medium cooking apples cored and sliced into 1/2 inch thick rings
For rub, in a small mixing bowl combine onion, cinnamon, soy sauce, sugar, salt and pepper.
Trim fat from meat. Use a sharp knife to score the top and bottom of the roast in a diamond pattern making cuts about 1/4 inch deep. Rub the onion mixture evenly onto all sides of the meat. Insert a meat thermometer near the center of the roast.
In a grill with a cover arrange preheated coals for indirect grilling. Test for medium-slow heat where the meat will cook. Place the meat on a rack in a roasting pan on the grill rack. Cover and grill for 1 to 1 1/4 hours or till the meat thermometer registers 155 degrees.
For the last 10 minutes of frilling, place apple rings on the grill rack beside the roasting pan. Grill apples till tender, turning once halfway through, 15 minutes before carving. (The meat's temperature will rise 5 degrees during standing.)
To serve, arrange meat and apple rings on a serving platter.
