GRILLED BASIL & PARMESAN BREAD
1/4 cup butter, softened
2 Tbsp. grated Parmesan cheese
1 Tbsp. snipped fresh basil
1 clove garlic, minced,
1/8 tsp. pepper
1 16-ounce loaf unsliced French bread
For spread, in a small mixing bowl combine butter, Parmesan cheese, basil, garlic, and pepper.
Cut bread into 1-ince thick slices, cutting to, but not through, the bottom crust. Spread cut surfaces with the spread. Tear off a piece of the heavy foil. Fold in half to make a double thickness of foil and seal with a double fold. Fold remaining ends to completely enclose the bread, yet leaving space for the steam to build.
Grill bread on the rack of an uncovered grill directly over medium coals for 15 to 20 minutes or till the bread is heated through, turning once halfway through.
Makes 16 Side Dish or Appetizer servings.
