BBQ SMOKED STUFFED HENS

 

2 medium onions, chopped
1 cup chopped fresh parsley
1 pound chorizo
4 cups of cooked rice
4 Cornish game hens
salt and pepper to taste
4 slices of bacon

Saute' onion and parsley for 5 minutes or until softened. Crumble on chorizo and brown. Remove from heat and drain excess liquid. Add rice and mix thoroughly. Stuff mixture into hen cavities. Season hens with salt and pepper. Wrap with bacon and secure with a toothpick. Cook in a BBQ pit for 30 to 60 minutes or until golden brown.

Yield: 4 servings

Note: Any type of sausage can be used for the stuffin, or try it with shrimp or crawfish tails.
