GRILLED VEAL CHOPS
1/4 cup fresh lemon juice
1/4 cup olive oil
2 Tbsp. chopped fresh thyme
2 Tbsp. minced shallots
1 garlic clove, minced
8 1-inch-thick veal chops
Salt and pepper to taste
Sprigs of fresh thyme
Mix the first 5 ingredients in a small bowl. Place veal chops in a shallow dish and pour marinade over them. Turn to coat evenly. Let stand 1 hour at room temperature. Preheat barbecue grill to medium high. Remove veal chops from marinade. Season with salt and pepper. Grill to desired doneness, about 5 minutes per side for medium-rare. Heat plates in warm oven. Serve with Chateau Sauce. Ladle sauce on plate and place chop on top of sauce. Garnish with fresh thyme.
