GRILLED FISH SANDWICHES

 

4 4-ounce fresh or frozen fish fillets, cut 1 inch thick
1 Tbsp lemon or lime juice
1 tsp. lemon-pepper seasoning
1/4 cup mayonnaise
2 tsp. Dijon-style mustard
1 tsp. honey
4 hamburger buns
4 lettuce leaves
4 slices tomato

Thaw fish, if frozen. Rinse fish; pat dry. Brush fish with lemon or lime juice. Rub the seasoning evenly on all sides of fish. Place fish in a well-greased wire grill basket. Grill on the rack of an uncovered grill directly over medium coals for 8 to 12 minutes or just till fish begins to flake easily, turning once.

Meanwhile, in a small mixing bowl stir together mayonnaise, mustard, and honey; spread onto buns. Serve fish on buns and top with lettuce and tomato.
