GRILLED TUNA WITH ROASTED PEPPER SAUCE

 

4 5-6 ounce fresh or frozen tuna steaks, cut 1 inch thick
1 Tbsp. olive oil
2 roasted red sweet peppers
3 Tbsp. lime juice
2 tsp. snipped fresh thyme
1/4 tsp. salt
1/8 tsp. pepper
2 Tbsp. butter
4 thin slices lime

Thaw fish, if frozen. Rinse fish; pat dry. Brush both sides of fish with some of the oil. Grill on the rack of an uncovered grill directly over medium coals for 8 - 12 minutes or just till fish begins to flake easily, turning once and brushing with remaining oil halfway through.

Meanwhile, for sauce, in a blender or processor bowl combine roasted peppers, lime juice, thyme, salt, pepper and 2 Tbsp. water. Cover; blend or process till smooth. Pour into small saucepan. Cook and stir over low heat till heated through. Stir in butter.

To serve, pour warm pepper sauce onto 4 serving plates. Top with fish steaks and lime slices.

Makes 4 servings.
