CLASSIC POTATO SALAD
6 medium potatoes
1 1/4 cups mayonnaise or salad dressing
1 Tbsp. prepared mustard
1/2 tsp. salt
1/4 tsp. pepper
1 cup thinly sliced celery (2 stalks)
1/3 cup chopped onion (1 small)
1/2 cup chopped sweet or dill pickles or sweet or dill pickle relish
6 Hard-boiled eggs, coarsely chopped
Paprika (optional)
Place potatoes in a medium saucepan; add water to cover and, if desired, 1/4 tsp alt. Bring to boiling; reduce heat. Simmer, covered for 20-25 minutes or till just tender. Drain well; cool slightly. Peel and cube potatoes.
Meanwhile, for dressing, in a large mixing bowl combine the mayonnaise or salad dressing, mustard (if desired), the 1/2 tsp. salt, and pepper.
Stir in the celery, onion, and chopped pickles or pickle relish. Add the potatoes and eggs. Toss lightly to coat. Cover and chill for 6 to 24 hours.
To serve, transfer the potato salad to the bowl. If desired, sprinkle with paprika.
Makes 12 side dish servings.
