MELON WITH GRILLED STRAWBERRIES
1 cup strawberries
1 Tbsp. confectioners’ sugar, plus extra for dusting
½ cantaloupe melon
Soak four wooden skewers for about 40 minutes. Meanwhile, scoop out the seeds from the half melon using a spoon, and discard them. Using a sharp knife, remove and discard the skin, then cut the flesh into wedges and arrange on a serving plate.
Prepare the grill. Hull the strawberries and cut them in half. Arrange the fruit in a single layer, cut-side up, on a baking sheet and dust with the confectioners’ sugar.
Thread the strawberry halves onto skewers and place on a grill rack over a high heat. Grill for 3-4 minutes or until the sugar starts to bubble and turn golden. Remove from the skewers and scatter over the melon slices, dusting with the remaining confectioners’ sugar.
Makes 4 servings.
