When is the meat ready?

FOR BEEF ONLY

TEMPERATURE MEAT TEMP COLOR OF CENTER
130° Very Rare Red Cool Center
140° Rare Red Center
145° - 150° Medium Rare Red/Pink Center
155° - 160° Medium done Pink Center
165° Medium Well Done Light Gray Center
170° - 180° Well Done Gray Hot Center

 

FOR CHICKEN, PORK AND TURKEY

As for white meat, there's only one way to grill it: Well Done.
Cook pork to 155° and chicken and turkey to 170°

Note: Meat keeps cooking even after you take it off the grill, so remove when it's 5° below desired temperature. Let stand a few minutes before carving and serving.
